    Wash and dry all produce. Preheat oven to 350 degrees. Cut demi-baguette into 1-inch cubes. Thinly slice persian cucumber crosswise into rounds. Halve heirloom grape tomatoes lengthwise. Thinly slice garlic . Halve, peel, and thinly slice shallot . Break fresh mozzarella into bite-sized pieces. Pick parsley leaves from stems; discard stems. Drain and rinse cannellini beans .

    Place demi-baguette cubes on baking sheet . Toss with olive oil , a pinch of salt , and black pepper . Toast until golden brown on the outside but still chewy in the center, ⏱️ 10 minutes .

    Meanwhile, heat 1 tbsp olive oil in large pan over medium heat. Add garlic and cook until fragrant, ⏱️ 30 seconds . Pour the oil and garlic into a large bowl and set aside.

    Return the pan to medium heat. Add cannellini beans and Italian seasoning – cook, tossing, until warmed through, ⏱️ 2 minutes . Season with a pinch of salt and pepper. Remove from heat.

    Add the toasted bread cubes, fresh mozzarella , shallot, tomatoes, cucumbers, and beans to the bowl with garlic oil. Toss to combine. Add parsley leaves. Sprinkle in 1 tbsp red wine vinegar (you have extra for the table). Season generously with salt and pepper.

    If time allows, let panzanella sit ⏱️ 10 minutes before serving (it's fine to skip). Divide between plates and serve.
